Tasting Notes
The dark berries, sandalwood and cedar aromas are certainly memorable. Full-bodied, dense and rich in the center palate with ripe, polished tannins and a long, flavorful finish. Dense and powerful.
The Producer
Château Les Ormes de Pez is one of St-Estèphe`s leading Cru Bourgeois properties. It was bought by Jean-Charles Cazes in 1936 and is now owned and run by Jean-Michel Cazes. The latter owns Lynch-Bages The estate is located just outside the village of Pez in the northern part of the St-Estèphe commune.
Vinification
Traditional vinification methods lasting on average 20 days were used for all vats, with rapid alcoholic fermentation. Running off began on 15 October. Barrelling started after malolactic fermentation at the end of December, to begin 16 months of wood ageing.
