Tasting Notes
Volnay combines breeding with nobility, delicacy, elegance and feminity. bright ruby, light garnet, its aromas of violet, redcurrant, cherry and with age spices, and cooked prune. Fresh on the palate, warm on the finish, one believes to bite into the fruit and breathe its flesh.
The Producer
Vincent Girardin was born in Santenay, in the Cote de Beaune Vincent is part of a winemaking family whose origins date to the 17th century. As of today, the Domaine represents 22 hectares (around 50 acres) which comprise of 42 parcels from 8 villages in the Côte de Beaune in the heart of Burgundy.
Vinification
Harvest-picking by hand. The grapes are sorted twice (when picking the grapes and on the sorting table), then partially destemmed (a third sorted out can be done if necessary with our optical machine). Afterwards put in stainless still thermo-regulated tanks. The alcoholic fermentation can begin with natural yeasts we have in the grape berries around 3 weeks. Pumping-over (the must) and crushing are very soft in order to be very careful about the substance and order to get the purest and most representative wine we can have. Soft pressing.
