Tasting Notes
Breathtakingly intense and pristine; gooseberries, cassis and a hint of tropical fruits backed by faintly smoky vanilla oak. Finishing with a crunchy lemony acidity.
The Producer
Peccavi Estate is a small boutique vineyard located in the ‘sweet spot’ sub-region of the Yallingup ridge in the north of the Margaret River region, WA.
Peccavi is one of the very first vineyards in Australia to have the same new clones being used by the greatest Estates of Bordeaux. During the hot growing period, their viticulture practices encourage vine roots to drive deep, past loamy topsoils down to the sub-strata of ancient granite in search of nutrients and water. This process ultimately concentrates flavour in the fruit and adds natural mineral characters to their finished wines.
Vinification
Wines are from 100% estate grown fruit. Only the most exceptional fruit is handpicked and then meticulously sorted by hand. Fermentation involves a combination of hand plunging and pump over every six hours and after an extended maceration, the wine is matured in the finest French artisanal oak for two years to produce outstanding wine in the Bordeaux style with new world methods.
