Citrus fruits and candied fruits on the nose with a discreet and elegant entry. Wine with good length and a liquorice finish.
The Producer
The family has devoted itself to winegrowing since 1792, handing the business down from generation to generation. Jean Collet created his eponymous estate in 1952, and in 1979, Gilles joined his father and the estate became Jean Collet & Fils. Gilles’ son Roman made a shift towards a more sustainable approach, and has converted part of the estate to organic farming and a large number of the wines have sported the organic label since the 2018 vintage. This is a family operation where tradition meets modernism.
Vinification
The delimited area of ​​our Chablis wines is located on limestone soils from the Upper Jurassic Kimmeridgian and Portlandian era, in the communes of Chablis, Préhy and Villy. This type of soil is defined by an alternation of very compact, very hard limestone layers and softer clayey marls, containing fossilized marine organisms.
The soils are cultivated according to a policy of reasoned agriculture where we avoid the use of polluting weeding products in favor of the mechanical cultivation of the soil, such as ploughing.
Pneumatic pressing and cold static settling. Spontaneous alcoholic fermentation and aging in thermo-regulated stainless steel vats.
