Tasting Notes
The nose is expressive with notes of white and yellow fruits, succulent flowers and touches of toast. The nose is elegant and powerful. The attack is round and vivacious. On the palate, the wine displays fine balance and a lovely body with crisp acidity. The same aromas are found as on the nose. This is an expressive and fresh wine with a long finish.
The Producer
Although Patrick Javillier has now retired, his winemaking legacy is in the capable hands of his daughter Marion and son-in-law Pierre-Emmanuel. Between them, they make an exceptional range of Chardonnays and Pinot Noirs. Despite their relatively low holdings of premier and grand cru vineyards, the estate is held in high esteem.
Vinification
When the grapes are harvested at the set date they are sorted on picking.
The white grapes are despatched to the cellar and processed by a pneumatic press; the must is then settled and filled into casks for the alcoholic fermentation through the action of the natural yeasts and followed later by the malo-lactic fermentation.
