Seven Springs Chardonnay 2021, Evening Lands, Eola Amity Hills

The bright, clean, and lively Seven Springs Chardonnay grows in the rockier areas of the vineyard’s mid-slope, offering a precise wine of clarity and finesse. With a nose of stone fruit, this wine unfurls gracefully, interweaving its svelte texture with zestful acidity and a saline detail.

At Evening Land, they look at their vineyard sites through the lens of winemaking, and ultimately make viticultural decisions based on what we believe will create the most delicious, complex, and cellar-worthy wines. Organic farming and biodynamic principles are just one of the many foundational building blocks. Overall, our philosophy is simple. We are farmers, and therefore very hands on in the vineyard, which allows us to remain relatively hands off in the cellar.

The wine underwent whole cluster pressing before being racked to once-used French barriques and Stockinger puncheons (500L) for fermentation. The wine remained in barrel for 12 months when it was racked to tank. The wine completed elevage in tank for another 6 months before bottling. The Seven Springs Chardonnay was cold stabilized and lightly fined with bentonite clay before bottling.
