Tasting Notes
Characterised by an intense ruby red colour with purple reflections, the aromas are typical of Amarone, made up of ripe red fruit, spicy aromas of licorice, black pepper and notes of chocolate. The palate is well balanced, with round and soft tannins, warm, slightly savoury and elegant, with a long and fresh finish thanks to the balsamic notes that distinguish it.
The Producer
This wine is dedicated to our father, Antonio Castagnedi. We make a selection of the best grapes from different vineyards and let them dry (appassimento) for at least 90 days as per Consorzio regulation. The philosophy behind this wine is to create an Amarone fruity, fresh and clean (aged in new barrels).
Vinification
Vinified in steel at a controlled temperature. Harvest: double hand selection in trays. Pressing: soft with pneumopress in December. Raisining: 3 months. Fermentation: at a
controlled temperature with selected yeasts for 25 days in steel. Malolactic fermentation: natural in 500 litre barrels. Bâtonnage: once a week for the first year. Aged 2 years in new 500 litre casks of French oak.
