Tasting Notes

Very elegant, discreat nose of herbs (herbal tea), reason, honey. The mouth is very focused with intense but ripe acidity, flavours of apricots, very good structure and length.

The Producer

First Growth since 1732 and part of the World Heritage Site of Tokaj declared in 2002, the Disznókő vineyards have always been sought-after due to their supreme quality.

Owned by influential aristocratic families and then nationalised, since 1992 the estate has been under the leadership of AXA Millésimes. With its know-how and experience in Aszú winemaking, Disznókő is recognized today as being in the forefront of the renaissance of the truly great Tokaji wines from the famed complex and succulent sweet offerings through to the elegantly dry and mineral led white wines.

Vinification

Each batch of aszú berries were vinified separately. About half of the berries was poured in an actively fermented must for 2 days for skin contact without crushing. The rest of the aszú berries were gently crushed and then soaked in a fresh wine or a wine at the end of its fermentation for 12 hours for skin contact. After a long pressing, the fermentation took place in stainless steel vats until the beginning of December.

The wine was aged for 2 years in oak barrels of 225 litres, mostly in oak barrels of several vintages. The aszú berries were selected one by one between the 19th of September and the 28th of October through 3 passages in the vineyard. The aszú berries were poured in stainless steel vats and stored there until the vinification.
