Tasting Notes
Lovely pale gold and gentle, fine bubbles. Toasty, spicy and complex aromas showing wonderful development after more than three years on lees in our cellar. The palate supports these complex aromas with honey, almond, pastry and baked apple flavours. Very fine and elegant with a great combination of intensity, delicacy and length.
The Producer
Nyetimber wines are made in England from 438 acres; the largest vineyard in the UK.
A new era for English wine began in 1988 when the first Nyetimber vineyards were planted in the heart of West Sussex where the geology and soils are similar to the Champagne region and the chalk seam found there reappears from under the Channel across the Sussex and Hampshire downlands.Their aim was to make premium sparkling wine that would rival Champagne. Over the years their premium sparkling wines have attracted international acclaim and set a high benchmark the world over.
Vinification
Once at the winery, they make sure that the juice from each vineyard parcel and each grape variety is kept separate so that they protect all of the individual characteristics. By adding yeasts which react with the sugars in the juice, they kickstart the fermentation process that forms the ‘base wines’ they use for blending.
