The acidity in this wine is excellent for Mediterranean cuisine. Pasta with bacon, seafood and fish dishes.

The Producer

Over the last two decades Terres Fidèles have been creating wines in the wilds of southern France. Embarking on adventures; exploring, discovering and rediscovering remarkable places and vineyard sites. From the foothills and valleys beneath the iconic Pyrénées, out through the gorges to the coastal areas of the Mediterranean.

The wines of Terres Fidèles are designed to express the spirit of this extraordinary place, old vine Grenache, Carignan, Malbec, Cinsault, Viognier and more, that are authentically crafted, small batch wines of the wilds.

Vinification

This Carignan Blanc vineyard is planted in the village of Tarerach at 550m altitude on granitic sand soils. Rooted between the high peaks of the Pyrenees and the flats of the Vallée de la Têt that meet the sea, the specific block of vines face the Dragon Roc, a natural rock formation atop the Crête de Serrabonne.

Grapes are hand-picked late into the harvest, a month later than other white varieties of the Roussillon. A very long and slow fermentation with lengthy lees contact without stirring. Malolactic fermentation. No fining. In the words of the winemaker, ‘this is a wild wine, made in a shed in the hills of the Roussillon.’
