Tasting Notes

A golden colour, distinctive of black grape varieties; very fine bubbles. A beautiful aromatic complexity; ripe fruit and spicy aromas; hints of roasted apples, compote and peaches. A subtle combination of structure, length and vivacity; bubbles like velvet; pear, brioche and spicy aromas, notes of fresh walnut.

The Producer

Bollinger is a prestigious Champagne house located in the village of Ay, in the Champagne region of France. The house was founded in 1829 by Jacques Bollinger and Paul Renaudin, and is still owned and managed by the Bollinger family. Bollinger is known for its high-quality Champagnes, which are aged for longer than many other Champagnes to achieve greater complexity and depth.

Vinification

It is cellar aged for twice as long as required by appellation regulations. It is moderately dosed at between 7 and 8 grams per litre.
