This white wine is complex and elegant, with flavours of ripe apples and lemons, and a long aftertaste.
The Producer
Alain Chavy produces restrained, structured, and long-lived white Burgundies from 17 acres of vineyards in Puligny-Montrachet, with small holdings in the neighboring villages of Chassagne and Meursault. Alain established Domaine Alain Chavy in 2003 with vineyards inherited from his father and includes some of Puligny’s top premier crus.
Vinification
Hand harvested grapes are barrel-fermented using a variety of sizes of barrel to avoid flavours from barrel dominating the fruit. Little lees-stirring is practiced and wines undergo malolactic fermentation in wood. The wines are usually bottled around 16 to 18 months after harvest.
