Aligoté is Burgundy’s lesser-known white grape. Wines made from it were traditionally used to make the cocktail kir. But to mix cassis into a classic wine such as this would be a travesty.

Hailing from low-yielding 50-year-old vines, this white has been barrel fermented, creating a very classy expression of this often forgotten grape variety. Displaying citrus, white peach, marzipan, spring blossom, mineral notes and wonderful poise, this is a cracker to pair with simple creamy pasta, citrus-doused fish dishes, appetisers, risotto or dressed summer salads.

Based in the heart of the Côte de Beaune, Charles Ballot runs the exemplary estate brought together by the union of his grandparents. Ballot-Millot owns an excellent array of vineyards from Chassagne-Montrachet to Pommard and employs a slow and gentle pressing, which draws out only the finest juice and allows a little oxidation that protects the wine as it matures in oak barrels. For us, the wines have always offered exceptional value for money, punching above their weight while remaining inexplicably under-the-radar.
